This unit's base is divided into two heat zones that are individually controlled with a 1-to-10 range thermostat, so items with varying heating requirements can be displayed on the same shelf. Its 69⁵⁄₁₆-inch-wide by 27³⁄₁₆-inch-deep by 4¹⁄₂-inch-high well accommodates as many as five full-size pans or 10 half-size pans.

Tempered curved glass encases the front of this full-service Alto-Shaam ED2-72-SS food display case to provide a full view of illuminated dishes, while bronzed glass sliding doors and a work shelf are built onto the back to create a cafeteria-style station. Because the unit holds foods without humidity and at relatively low temperatures, condensation doesn't form on the front glass. For optimal visibility, 10 overhead bulbs highlight foods. Users can lift the tempered glass front to a 90-degree angle to streamline end-of-day cleaning, and the operator-side doors are removable and feature a clean-sweep cutout for crumb removal.
