Increasing cooking flexibility and reducing cycle times, the Alto-Shaam CTP6-10E Combitherm CT PROformance full-size combi oven can be used for convection heating, steaming, or a combination of the two. It can hold seven half-size sheet pans or full-size steam pans on nontilt support rails. LED lighting, designed for efficiency, shines in the cabinet to provide visibility. Operators can monitor food through the cool-touch, triple-pane glass door window, and when the cycle is over, the door handle illuminates to notify users without an audible signal.
PROtouch controls on this Alto-Shaam CTP6-10E boilerless combi oven simplify operation, enabling staff members to select the cook mode with options for convection, steam, combination, or retherming. Depending on the application, users can also choose the humidity level from 0 to 100 percent to maximize flexibility and food quality. There are two power levels to choose from, and menu recipes can be uploaded and downloaded through the USB port. Cleaning the unit is straightforward because it has five selectable settings—from a 20-minute rinse cycle to a 3-hour 30-minute, heavy-duty PLUS wash cycle. A retractable hose is integrated into the front of the unit, so it can be used during cleaning.
