Designed to maintain safe product temperatures while chefs are preparing food for plating, the Alto-Shaam CS-200-QS carving station has a fixed, double infrared lamp assembly that radiates directly to the carving surface with a controlled, uniform pattern. Designed with sanitation in mind, the cutting board can be removed for cleaning, and because the surface is recessed, it catches drippings to contain messes. The carving unit is made of 18-gauge stainless steel—a durable material that eases the cleaning process. It is elevated by 1-inch legs and can be placed on top of a cook and hold oven.
