Great for cooking, roasting, retherming, and holding, the Alto-Shaam 767-SK-QS commercial smoker oven uses a controlled, uniform heating system to evenly cook food and hold it without shrinkage or moisture loss. Ideal when smoking cheese and fish, the unit can be used to cold smoke product. It accommodates 100 pounds of product at a time and can hold nine full-size, 21⁄2-inch-deep hotel steam pans.
The controls in this Alto-Shaam 767-SK-QS half-size cook and hold smoker oven are designed for simplicity so new employees can quickly be trained on the unit. There is a single on/off switch and temperature range settings for both the cook and hold settings. Cook and hold time can be adjusted with up/down arrows, and all these settings display on the digital readout. Because the unit can be used for a variety of product applications, it includes wire shelves, side racks, and a rib rack. All these components are made of durable stainless steel, along with the oven exterior.
